Thai Cucumber Salad

This is a spicy salad inspired by the cuisine of Thailand.

Ready In: 10 Minutes

INGREDIENTS:
1-1/3 cucumbers 
1 tablespoon and 1 teaspoon fresh lime juice 
3/4 teaspoon chili powder 
1/8 teaspoon salt 
2 teaspoons chopped fresh cilantro 

DIRECTIONS:
Peel cucumbers, slice lengthwise into quarters and cut into 1-inch pieces; place in large bowl. Sprinkle with lime juice, chili powder, and salt; toss. 

Toss with cilantro. 

If desired, refrigerate until chilled.
