A lovely salad that will please the eye and delight the stomach. It also makes a great lunch.

2 ounces low-fat imitation bacon bits
4 egg whites
1/4 head lettuce
1/2 carrot, shredded
1/2 tomato, sliced
1-1/2 teaspoons olive oil
1-1/2 teaspoons red wine vinegar
salt and pepper to taste
Place eggs in a saucepan and cover with cold water. Bring water to a boil and immediately remove from heat. Cover and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, run under cold water, peel, discard egg yolks, and
